These quesadillas are an easy weeknight meal, a delicious lunch for you or your kids to take to school or work(thank you leftovers!), the perfect after-school or study snack, and a great way to use leftover chicken. You also get to make the quesadilla exactly how you want it!

I can honestly not hype these quesadillas up enough, I know that you are absolutely going to love them!

Simple and Delicious Taco Bell-Inspired Quesadilla with Creamy Chipotle Sauce 

This recipe yields 4 small quesadillas or 2 large quesadillas depending on the size of the tortillas used.

Additionally, any notes will be under the recipe indicated by asterisks. 

Ingredients:

1 pound of shredded or chopped cooked chicken or steak (Rotisserie chicken is great with these, or I’ll use leftover chicken with Chicken Fajita seasoning*)

8 small tortillas or 4 large tortillas 

1 Cup shredded cheese of choice (I use Mexican shredded cheese because I always have that on hand)

½ cup of Taco Bell Creamy Chipotle Sauce (or more or less depending on preference)

Instructions**:

  1. Heat a pan to medium heat (use whatever size pan will fit the tortillas). 
  2. Grease the pan with a thin layer of butter or oil and place down one tortilla. 
  3. Next, sprinkle a thin layer of shredded cheese on top of the tortilla.
  4. Then, sprinkle on some chicken or steak, distributing it in an even layer over the cheese and tortilla. 
  5. Squeeze a couple of tablespoons(or more or less depending on preference) of Taco Bell Creamy Chipotle Sauce on top of the chicken, as evenly as possible. 
  6. Once the Creamy Chipotle Sauce is distributed, top everything with one more even layer of shredded cheese. 
  7. Then, top the quesadilla with a second tortilla.
  8. Give the quesadilla a few seconds longer, then flip. 
  9. Cook the quesadilla on each side for a couple of minutes until the tortillas are slightly brown and crispy and the cheese is melted. Enjoy!***

* My boyfriend and I like to make a large batch of chicken to have in the fridge so that it is prepped and ready to go, so I usually use prepped/leftover chicken when I make these. It makes it a lot faster and easier. Chicken with Chicken Fajita seasoning goes great with these quesadillas! That being said, use whatever you like. 

** Additionally, these steps in the instructions are how I assemble my quesadillas. I find that this method distributes everything evenly, and I get the Creamy Chipotle Sauce in every bite, which was important to me. Highly recommend it! However, the beauty of quesadillas, it’s hard to go wrong. Make them however you like!
