Additionally, any notes for this recipe will be at the end of the recipe indicated by asterisks.
Ingredients:
Ingredients for Chicken Tacos:
1 lb Chicken (I use boneless skinless breasts)
1 Tbsp Chicken Fajita Seasoning
8 small flour tortillas, or 4 Large Tortillas*
1 Cup Iceberg lettuce (chopped) or Lettuce of Choice
½ Cup Shredded cheese of choice (I usually use Mexican blend because I always have that on hand)
2 Tbsp Taco Bell Creamy Baja Sauce** (or more or less to taste)
Pico De Gallo*** (recipe included in Instructions portion) OR 1 Can of Diced Tomatoes with Green Chiles
Guacamole Crema Sauce (recipe included in instructions portion)
Hot Sauces of choice****, optional
Ingredients for Pico de Gallo:
1 Roma Tomato, chopped
½ Yellow Onion, chopped
Juice from ¼ – ½ Lime (or to taste)
Salt and Pepper to taste
Ingredients for Guacamole Crema Sauce*****:
1/2 Cup Prepared Guacamole
1/2 Cup Sour Cream (Daisy is the best, in my humble opinion)
Juice from ¼ Lime (or to taste)
Salt and Pepper to taste
Instructions:
Chicken Tacos Instructions:
- Prep your ingredients and vegetables. Chop the lettuce, and chop tomato and onion if you’re making pico de gallo.
- Heat a large pan over medium heat. Add 1-2 Tablespoons of oil to the pan.
- As the pan heats through, season both sides of each piece of chicken with the chicken fajita seasoning.
- Place seasoned chicken in the heated pan. Depending on the size, cook on each side for approximately 6-8 minutes or until the internal temperature of the chicken is 165 degrees Fahrenheit.
- As the chicken cooks, prepare the pico de gallo and guacamole crema sauce (instructions included below).
- Once the chicken is cooked through, set aside to rest for a few minutes. This helps the chicken stay juicy.
- While the chicken rests, heat your tortillas in a different pan (or wipe clean the pan you used for the chicken) using a little butter or oil. A minute or so on each side, so they are still malleable and flexible.
- After the tortillas are heated through, cut the chicken into bite-sized pieces.
- Now, assemble! The beauty of tacos, you can assemble them however you like. For mine, I do tortilla, lettuce, chicken, shredded cheese, guacamole crema sauce, pico de gallo, Creamy Baja Sauce, then hot sauce. I like the crunch and support of the lettuce as the first layer of the taco, I highly recommend it! Enjoy!
Pico de Gallo Instructions:
- Put chopped tomatoes and onions into a bowl, add lime juice, and stir. (You may want more or less lime juice, depending on your preference).
- Add salt and pepper to taste, and stir. Enjoy!
Guacamole Crema Sauce Instructions:
- In a bowl, combine the guacamole and sour cream. Adjust amounts to your liking, if necessary.
- Add a squeeze of lime, and stir. Add more if preferred.
- Lastly, stir in salt and pepper to taste. Enjoy!

Notes for Chicken Tacos Recipe:
* I can not express the importance of heating your tortillas through enough, especially in a pan. (In a pinch, you can do it in a microwave, but the taste and texture are SO much better in a pan). I had never been introduced to that concept until recently when my boyfriend’s dad did it. The tortillas we buy are freshly made at our local grocery store, so it’s necessary because they’re still a little soft and doughy. But even doing it to any storebought tortillas still elevates them, and makes them easier to form into wraps. It is something that improved my cooking at home for anything involving tortillas.
** My boyfriend bought me the Taco Bell Creamy Baja Sauce with the Taco Bell Creamy Chipotle Sauce because they came in a pack together. I was more interested in the chipotle sauce so I could use it in quesadillas. However, when I tasted the Creamy Baja Sauce I knew immediately it would be great with chicken tacos. The flavor felt more compatible with chicken tacos or a chicken taco salad. It adds an extra depth of flavor to these chicken tacos.
*** I do recommend making fresh pico de gallo for this recipe. It tastes so much better when you make it fresh yourself, and adds an amazing fresh element to the nachos. That being said, you do you, and if you want to use store-bought pico de gallo or canned diced tomatoes with green chiles, zero judgment from me.
**** Hot sauces are optional, however I HIGHLY recommend them. Initially, I had a few bites without hot sauce on the tacos and I felt like they needed a little something. Once the hot sauce was added, they were perfect! The Mild Green Pepper Sauce Jalapeno Tobasco and Cholula hot sauce are favorites.
***** When we made the Guacamole Crema sauce, this was the ratio of guacamole and sour cream we used. However, you can tweak the amounts to your preference! Also, I buy prepared guacamole from the grocery store because that’s just easier honestly.
